Abstract

In today's studies in the field of gastronomy, the consumption of insects as food (entomophagia) is more common than before. The fact that edible insects are now handled in the field of gastronomy, being able to benefit the environment and human health and being seen as an alternative food source for these reasons made it an important trend. In the 2017-2018 academic year, the evaluation of the perspectives on the use of alternative food sources among the students of Necmettin Erbakan University who have knowledge about edible insects (1st conscious group), nutritional knowledge (2 groups) and those who do not (3rd group-control) and among the groups aimed to be compared. In this context, a total of 474 people were interviewed. The data obtained from the research were evaluated in a statistical program. According to the data, it was found that helalis was taken into consideration in three groups. Participants stated that they can think of insects as alternative food, although they stated that they would not eat if they were halal. It is seen that insect eating tendency is an unstable approach in all groups for today as it will contribute to the field as a gastronomic element. Thus, it is thought that some edible insects can be consumed in our country or not.
