Abstract

İncili Gastronomy Guide and Yedi Köşeli Yıldız (YEDY) Gastronomic Rating System are the first national rating system that evaluate restaurants by considering metarial flovar, creativity, service, presentation and decoration properties and are active in Turkey. This study was carried out for analyzing evaluation and rating systems that are considered necessary for the development of gastronomy. In this context, the guides published in 2017 were analyzed with the content analysis method. 280 restaurants, graded in the İncili Gastronomy Guide and 555 restaurants in the YEDY Gastronomic Rating System were subjected to content analysis. İn İncili Gastronomy Guide 56.8 % of the restaurants were evaluated by taking ‘1’ pearl, 32.5 % ‘2’ pearls, 10.4 % ‘3’ pearls. According to YEDY 94.6 % of the restaurants were evaluated as Flavor Point, 3.8 % ‘1’ star, 1,4 % ‘2’ stars. The highest ranked rastaurant in both rating systems is designated as Mikla. As aa result of the findings obtained from the studies were suggested to restaurant managers, chefs and cooks.
