Gastronomy From Past to Today: A Bibliometrical Analysis

The purpose of the study is to put forward tendencies and trends in the last 48 years in the discipline by bibliometrically examining 703 studies published in the field of gastronomy between 1970 and 2017. In this regard, Web of Science Core Collection database was searched using the keyword “gastronomy”, and relevant bibliometrical data were obtained. The studies were examined within the scope of the number of publications in line with the years, publication types, publication languages, citation analyses, country collaborations, common citation network and concept-topic tendencies. To determine the common citation networks and concept-topic tendencies, social network analysis was used. According to analysis results, it can be indicated that the interest in the field has increased starting from 2000s in the context of the number of publications and citations. The studies were mainly carried out in the type of article and proceedings paper and in English. It was observed that the USA played the key role in collaborations between countries, that the journal with the highest citation burst was Journal of Culinary Science & Technology, and that the author with the highest citation burst was Herve This. Studies conducted in 2003 and 2005 by Hayagreeva Rao et al. were the most important citation resources which paved the way for the other studies in the field. Model development and international tourism are the most studied topics in the field, and gastronomy and French gastronomy are the most utilized concepts.
