Regional Cuisine of Cappadocia and Example of Mustafapaşa (Sinasos)

A historical place and natural beauty of the destination raises curiosity as well as food
culture. In this sense, the Turkish cuisine is a unique cuisine that contains many local
specialties. From past to today, Cappadocia constitutes cultural mosaic and this mosaic is
reflected in the local food culture. Until 20th Century Karaman Greeks and Turks lived
together in Mustafapaşa and then this common life where Emigrants settled, has led to the
diversification of food culture. This study investigates the cuisine from Mustafapaşa of
Cappadocia’s town, which is an attractive touristic region for tourism for both its natural
beauty and rich culture. The purpose of the study is to draw attention to the regional
cuisine Mustafapaşa, to contribute to gastronomy tourism as a kind of alternative tourism
in Cappadocia Region and to promote regional cuisine.
