Özet

Tüm Dünya’yı etkisi altına alan pandemi restoranların servis sistemini de etkilemiştir. İş kayıplarının meydana gelmesi, sosyal mesafe kuralları ve yeni normal uygulaması ile birlikte restoranlar uyum sağlamak ve işlevlerini sürdürebilmek için farklı yöntemler geliştirmiştir. Online yemek sistemlerine ve paket servislere olan ilgi giderek artmıştır. Artan yaşam temposu gibi farklı sebepler insanların yemek ihtiyaçlarını çevrimiçi yemek hizmetleri ile karşılama durumu fazlasıyla artış göstermektedir. Ayrıca pandemi etkisi ve değişen yaşam şartları ile birlikte restoranlar devamlılıklarını sağlamak ve yeni sisteme ayak uydurabilmek içi farklı stratejiler geliştirmeye başlamıştır. Bu stratejilerle birlikte hayalet mutfak kavramı ortaya çıkmıştır. Hayalet mutfaklar yalnızca yemeklerin hazırlanması ve teslimat sistemlerine odaklanmaktadır. İnsanların çevrimiçi yemek sistemlerini kullanarak sipariş vermeleri, hayalet mutfaklarda yemeklerin hazırlanması ve paket servis ile tüketicilere ulaştırması sistemi üzerine kurulmuştur. Bu çalışma gelişen çevrimiçi yemek sistemleri, hayalet mutfak kavramı, hayalet mutfakların avantaj ve dezavantajlarını ve hayalet mutfağın geleneksel mutfaktan farklılıklarını ele alan kavramsal bir çalışmadır. Çalışma sonuçlarına göre restoranların oluşturduğu yeni strateji ve kavramların ilgi gördüğü, günlük hayatta pek çok tüketicinin ihtiyaçlarını karşılaması ve işletme sahiplerinin restorandaki ambiyans ve personel giderleri gibi maliyetleri düşürmesi nedeniyle avantajlı bir uygulama olduğu söylenmektedir.
