A Research on Investigating the Effects of Colors on Soups’ Taste Perception

Abstract

It is seen that colors have different symbolic values and meanings in the different cultures, since the beginning of history. The appearance especially the color of food is a
critical information source in terms of safety and flavor estimation before tasting. Affecting the pleasure and taste, color plays an important role in food selection and consumption. This study is aimed to determine the effects of colors on soups’ taste perception. The research was conducted in Salihli, Manisa. The survey was conducted
between 07-20 June 2017, in various age groups and professions of students and people who voluntarily participated in shopping centers and cafes in Salihli. 571 people participated in the survey and 495 surveys were accepted. The demographic of participants, the effects of colors on soups’ taste perception and soups associate with
colors were analyzed. As a result of the research, it was found that the psychological effects of colors are in line with the literature.
