Abstract

Taste of the food is the most important thing in terms of its consumption. There are
various items with flavor in nature. These tastes divided into five groups as sour, bitter,
sweet, salty and umami. In general people level of sensation of these tastes differs. Many
factors play role in formation of these differences like age, sex, genetic, diseases,
psychological status, socio-cultural differences, habits and characteristics of the food
tasted. Further studies may discover the new factors or reveal that the effects of certain
factors stem from some other reasons. It is expected that this study will contribute to
establishments serving food and beverages like hotels, restaurants etc. about determination
of consumers’ expectation of tastes, understanding different reactions to consumed foods
and preparing menus according to consumer profiles and selecting panelists in food
industry.
