Abstract

Turkish cuisine, enriched over centuries through the influence of various cultures, stands as one of the world’s most diverse and sophisticated culinary traditions, characterized by the skillful use of a wide array of spices, fresh seasonal produce, meats, and pastry-based dishes. This study seeks to investigate the transformations within the culinary practices of Turkish immigrants from Bulgaria residing in Eskişehir. A qualitative research methodology was adopted, employing the semi-structured interview technique for data collection. A total of 20 interview questions were meticulously developed and applied to seven participants of Bulgarian immigrant descent living in Eskişehir. The data were analyzed through content analysis and thematic analysis. Three major themes emerged from the analysis: urbanization, culinary practices, and the impact of seasonality and technology. The findings reveal that the cuisine of Turkish immigrants from Bulgaria has experienced significant alterations within the context of these identified themes.
