Suriye’den Gelen Göçmen Öğrencilerin Beslenme Alışkanlıkları ve Aşçılık Deneyimleri (The Dietary Practices and Culinary Experiences of Syrian Student Migrants)

Öz

Bu çalışma, Erzurum ve Iğdır’da yaşayan Suriyeli göçmen öğrencilerin beslenme alışkanlıkları, aşçılık deneyimleri ve kültürel uyum süreçlerini incelemeyi amaçlamaktadır. Nitel araştırma tekniği ile yürütülen çalışmada, Temmuz-Ağustos 2024 tarihleri arasında 30 Suriyeli göçmenle yüz yüze derinlemesine görüşmeler gerçekleştirilmiştir. Veriler içerik analizi yöntemiyle değerlendirilmiştir. Araştırma bulgularına göre, Türkiye ve Suriye mutfak kültürleri arasında önemli benzerlikler bulunmakla birlikte, özellikle baharat kullanımı, pişirme teknikleri ve bazı özgün yemek malzemelerine erişimde farklılıklar göze çarpmaktadır. Katılımcıların bir kısmı, Türk mutfağını öğrenme ve benimseme konusunda olumlu deneyimler yaşarken; bazıları ise beslenme alışkanlıklarında değişim ve adaptasyon sürecinde zorluklar yaşamıştır. Göçmenlerin dil bariyeri, ekonomik koşullar ve malzeme teminindeki güçlükler, onların beslenme pratiklerini etkilemiş; bu durum kimi zaman sağlık sorunlarına yol açmıştır. Ancak zaman içinde Türkiye’deki Suriyeli esnafların Suriye’ye özgü ürünleri temin etmeye başlaması, göçmenlerin kendi kültürel yemeklerini pişirme ve tüketme imkânını sağlamıştır. Sonuç olarak, ortak kültürel kökenler iki toplum arasındaki beslenme uyumunu kolaylaştırırken, dil, malzeme erişimi ve ekonomik faktörler göçmenlerin entegrasyon sürecinde belirleyici unsurlar olarak öne çıkmaktadır.
