Slow Food Ekseninde Sürdürülebilir Gastronomi ve Sosyal Girişimcilik Örneği: Mutfak Müzesi Gastro Muğla (An Example of Sustainable Gastronomy and Social Entrepreneurship on the Slow Food Axis: Culinary Museum Gastro Muğla)

Öz

Sürdürülebilir gastronomi, yerel gıdaların turistlerle buluşturulması yoluyla hem biyoçeşitliliğin hem de destinasyonların gastronomik kimliğinin korunarak geleceğe aktarılmasına katkı sunmaktadır. Sosyal sorunlara çözüm üretme motivasyonu ile hareket eden sosyal girişimciler ise dezavantajlı grupların topluma kazandırılması, kültürel değerlerin korunması ve çevresel duyarlılığın artırılması gibi işlevlerle turizme çok yönlü katkılar sağlamaktadır. Bu çalışmada, Türkiye’nin ilk ve tek coğrafi işaretli ürünler restoranı olan Mutfak Müzesi Gastro Muğla işletmesinin faaliyetleri; sürdürülebilir gastronomi ve sosyal girişimcilik bağlamında işletme, çalışanlar ve eğitim alan bireylerin perspektifinden incelenmiştir. İşletme yöneticisinden elde edilen veriler betimsel analiz yöntemiyle değerlendirilmiş; ifadeler 12 kategori ve 3 tema altında sunulmuştur. Çalışanlar ve eğitim alan katılımcılardan elde edilen veriler ise içerik analizi ile çözümlenmiş; toplam 169 kod, 25 kategori ve 11 tema halinde sınıflandırılmıştır. Elde edilen bulgular, Gastro Muğla’nın yalnızca bir yeme-içme mekânı olmanın ötesine geçerek; yerel gastronomik kimliğin korunması, coğrafi işaretli ürünlerin yaygınlaştırılması, geleneksel pişirme yöntemlerinin sürdürülmesi ve toplum temelli gastronomi eğitiminin desteklenmesi gibi unsurları bütüncül bir yaklaşımla bir araya getiren özgün bir sosyal girişim modeli geliştirdiğini ortaya koymaktadır.
