Öz

Etnik restoranların kültürlerarası etkileşim, gastronomik deneyim ve misafirperverlik pratikleri açısından nasıl algılandığını çevrimiçi müşteri yorumları üzerinden değerlendirmek bu araştırmanın temel çıkış noktasını oluşturmaktadır. Londra’da faaliyet gösteren Sofra Restaurant’a ait TripAdvisor yorumları doküman incelemesi tekniğiyle ele alınmış, veri temizleme sürecinin ardından kullanılabilir durumdaki 1013 müşteri yorumu tematik analiz yaklaşımıyla değerlendirilmiştir. Bulgular, etnik restoran deneyiminin sadece yiyecek kalitesi ya da hizmet performansı üzerinden şekillenmediğini göstermiştir. Etnik restoran deneyimi ayrıca, otantiklik, kültürel temsil, personel etkileşimi, ikram kültürü ve duygusal bağ gibi çok katmanlı unsurlar aracılığıyla anlam kazandığını göstermektedir. Gastronomik deneyim ve otantiklik algısı, özellikle ürün çeşitliliği, lezzet, atmosfer ve Türk mutfağına ilişkin kültürel çağrışımlar üzerinden belirginleşmiştir. Ticari ve sosyal misafirperverlik boyutları ise müşteri memnuniyetinin temel belirleyicileri arasında yer almaktadır. Personel kalitesi, ürün/menü ve ikram kültürünün öne çıkması, müşterilerin restoran deneyimini “ne yedikleri” kadar “nasıl karşılandıkları” ve “nasıl ağırlandıkları” üzerinden değerlendirdiklerini ortaya koymaktadır. Çalışma, Londra’daki Türk restoranları bağlamında gastronomik deneyim, otantiklik ve misafirperverlik ilişkisini kültürlerarası bir bakış açısıyla ele alarak etnik restoran literatürüne katkı sunmaktadır.
