Abstract

Food and beverage supply in the tourism sector is an important element. The purpose of
this study is to research on different breakfast cultures in Mersin region in Turkey and to
prepare standard recipes in order to ensure the sustainability. Standard recipes are a tool to
ensure the sustainability features and taste of food and beverage of breakfast. For this
reason, primarily living in the area among nomads, immigrants, Arabic (Muslim, nonMuslim), the ten resource persons from different religions and cultures have been
discussed with and the sample of the breakfast standards recipes are prepared. The
religious and cultural information of the resource person of the origin is taken from
literature. As a result, it has been mentioned the contribution of breakfast standard recipe
of Mersin region in the tourism sector recenlty.
