Abstract

The 5S process is one of the techniques born out of Japanese manufacturing system. Ohno, the developer of 5S, found that when manufacturing waste is eliminated, costs reduce and profits increase. Just as in production enterprises, they need to gain competitive power by controlling their costs in their restaurants. The 5S technique that emerges within the lean management process is one of the management techniques that can provide it by managing waste. The purpose of this study is to examine the stages of the 5S technique and present a model proposal for restaurants. It is of great importance
that restaurant owners present suggestions for applying to restaurant managers.
