A Research on the Problems of Vegans Compare in Restaurants

Abstract

Considering various consumer groups have different expectations and preferences, in this study, It is aimed to bring out the problems that vegans face in restaurants, which is interested in the food and beverage industry and a subject is not mentioned much by the researchers. The research data was collected with open-ended questionnaire from people in the vegan groups in social media and analyzed using content analysis and descriptive analysis that are from qualitative analysis techniques. According to the result of the study it is found that the basic problems of the vegans at restaurants are about menu contents, staff attitudes and behaviors and business management. Additionally, the wishes and expectations of this consumer group are mentioned in the study
