Spices the Magic of Cuisines: Determination of Spice Consumption Habits in Kayseri Province

The purpose of this study is to investigate the spice consumption habits of people who live
in Kayseri province. As a result of the literature review, it has been found out that there
are some studies which examined people’s spice consumption habits; but there are not any
study related to Kayseri. This study is important in terms of the contribution of this
deficiency. In this context, as a priority, an appropriate questionary was prepared and the
questionnaire was applied to the participants who were over 18 years of age and resided in
Kayseri by using convenience sampling method. The data were analyzed by using
appropriate statistical program. The demographic characteristics of the participants were
surveyed and spice consumption habits of the participants were found out in terms of
frequencies and percentages. According to the survey results, three spices that the
participants mostly use are black pepper, red pepper and mint; three points that they
mostly pay attention while buying spices are freshness, smell and taste.
