Abstract

Street food, one of the trends of the gastronomy world, are among the products that consumers buy due to their convenience in obtaining and low prices. Recently, with the increasing interest in street foods, it brings to the fore the necessity of researching the perspective of consumers. Although these foods were consumed by taking advantage of their satisfying properties in some cases, sometimes they became products that created awareness with the increase of gastronomic movements. This research aims to observe the street foods perspective from the consumer perspective and to develop a scientific understanding. For this purpose, data were collected from 300 consumers who live in Sivas and prefer street foods within the scope of the survey technique. As a result of the analysis of the survey data, three dimensions were determined for street foods: purchasing value, consumption value and quality value. The differences between the demographic information of the participants and the data obtained as a result of the research were tested using the t-test and Anova analysis. According to the findings, a significant difference was observed in terms of age, education level and income regarding street foods. In addition, consumers give importance to taste and hygiene when purchasing street food within the scope of the answers given to the questionnaire questions. However, the participants think that street foods in Sivas province do not have enough variety. In this context, improvements can be made especially in terms of obtaining geographical signs by attaching the necessary importance to street foods and taking necessary initiatives by tourism stakeholders. It is thought that carrying out studies on street foods will provide different perspectives on gastronomy tourism. In this study, the point of view of the local people on street foods has been revealed. This research has been carried out on the local population, but later studies can be conducted on tourists or on the views of peddlers who play a leading role in the production of street foods.
