Abstract

Due to the rapid urbanization of many developing countries, demand for street food is increasing. Street food has become increasingly important as it is an income-generating strategy, fast and economical meal option. Eating in the street is an important part of everyday life as it was in the past. One of the most effective ways to discover and recognize a different country is to taste street food. Therefore, it is important for foreign tourists to discover a culture as well as street food, which is cheap and quality. The aim of this study is to reveal the views of the foreign tourists visiting Istanbul, which is one of the most touristy cities in our country, on Istanbul street tastes. The study was carried out by means of multiple data collection methods including archive scanning, unattended observation and semi-structured observation. According to study results, it’s found that generally foreign tourists are satisfied with street food sold in Istanbul, but they are concerned about the cleanliness of street foods, employees' clothes and the cleanliness of the places where they sell. At the end of the study, recommendations were made to both local managers and sellers selling street food.
